Amaretti

Introduction

A dry almond biscuit. Goes very well with coffee.

Ingredients

  • 20g Bitter Almonds
  • 80g Sweet Almonds
  • 300g Sugar
  • 60g Egg whites (~2 eggs)
  • 3g Ammonium bicarbonate

Method

  • Blend almonds, half the sugar and egg whites
  • Add the rest of the sugar and egg whites, with the ammonium bicarbonate and blend to a consistent mass
  • Transfer to a baking sheet in small dollops on baking paper
  • Smooth, lightly moisten with water and sprinkle with icing sugar
  • Bake in a convection oven at 170C for 15-18 minutes. Allow to cool after
