Amaretti

Introduction
A dry almond biscuit. Goes very well with coffee.

Ingredients
- 20g Bitter Almonds
- 80g Sweet Almonds
- 300g Sugar
- 60g Egg whites (~2 eggs)
- 3g Ammonium bicarbonate
Method
- Blend almonds, half the sugar and egg whites
- Add the rest of the sugar and egg whites, with the ammonium bicarbonate and blend to a consistent mass
- Transfer to a baking sheet in small dollops on baking paper
- Smooth, lightly moisten with water and sprinkle with icing sugar
- Bake in a convection oven at 170C for 15-18 minutes. Allow to cool after
